Description
In the Middle East, very often, the Arabic Coffee is made in hot sand.
Arabic, Armenian and Greek coffee is a very strong thick coffee, with the coffee grinds at the bottom of the cup and served in a small coffee cup.
The purpose of the sand is to create an even heat, and the coffee foams to the top almost immediately. The coffee pot or “jezve” is removed and returned to the sand three to four times and each time the foam at the top of the pot almost overflows. It is then poured into a small cup keeping the foam at the top. The coffee grounds quickly settle to the bottom of the cup making for a strong, thick cup of coffee.
