Description
Lavash, an Armenian, thin, flat, unleavened bread dates back to well over 2,000 years. In fact remnants of a "tonir", an Armenian version of a tandoor, was found dating back almost 6,000 years ago.
Today, in Armenia, Lavash is mostly made commercially, but there are many small bakeries that still make it the old fashioned way. There are usually 3 women at work, one preparing the dough, one rolling out the dough into very thin sheets measuring about 30" x 15" and the third sitting or kneeling at the edge of the tonir (tandoor), which is set into the ground.
The dough is stretched out onto a pillow and then slapped against the wall of the tonir, where it sticks and within a few minutes it's peeled off the wall and laid out to cool.
These may have been the original wraps, since everything is wrapped in it, meat, salads and vegetables are wrapped and eaten.
In an Armenian home it is virtually ill mannered to have dinner without Lavash on the table.
